Recipe: Nancy’s Corn Salsa
Ingredients
- 2 C fresh cooked corn
- 1 small red sweet pepper, finely chopped
- 2 Tbsp finely chopped onions
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp olive oil
- salt (to taste)
- Hot pepper flakes, or minced Hot Wax Pepper (to taste- if you want it)
Instructions
- In large bowl, mix all ingredients. Chill
- I have changed cooked corn using grilled corn ( it is awesome) You can use red, green, or yellow peppers or a mix of the three. White balsamic adds an other twist to the dish.
