Recipe: Green Beans Simmered with Tomato

Ingredients

  • 2 T olive oil
  • 1 onion, sliced into thin rounds
  • 1 garlic clove, finely chopped
  • 1.25 pounds of green beans (this is what your bag weighs this week)
  • 1 large ripe tomato, peeled, seeded, and diced
  • 2 t chopped parsley
  • 2 t dried dill
  • salt and fresh ground pepper

Instructions

  1. Heat the oil in a medium or large skillet, add the onions, and cook over medium heat until soft and translucent, about 4 minutes.
  2. Add the garlic, beans, tomato, and enough water just to cover.
  3. Simmer until the beans are tender, then add the herbs and simmer 1 or 2 minutes more.
  4. Season with salt and pepper to taste.
  5. Serve hot, tepid, or even chilled.
